Pagosa Brewing Company

By Tony Simmons, Founder and Head Brewer

Opening my own brewery was a dream come true. It took a lot of planning and patience to make it happen. I chose to open my brewery in the small mountain resort town of Pagosa Springs, Colorado. Pagosa Springs presented a good opportunity because it was one of the few towns of its size that didn’t already have a brewery. Also, I happened to live there.

I spent a lot of time and effort creating a comprehensive business plan which I firmly believe was a crucial step to map out the success of the business. Then I hunted, and waited, and waited, and waited for the right location to become available. I figured I had only one shot at being successful so it had better count!

We’ve been successful since our opening in 2006. We’ve continually added and expanded since then, including a new dining room, new kitchen and 10,000 square feet of tree-covered beer garden with a festival tent and full-sized stage for live music.

We adopted a tasty menu of beer-themed cuisine that includes items such as beer-battered salmon fish & chips, gourmet pizzas with beer crust and bison burgers with beer-caramelized onions and crumbled gorgonzola served with our whole grain beer mustard.

We’re also very community-minded. We regularly support our local non-profits. Rather than just donating beer, we create events and sometimes even craft special beers in their honor.

Our philosophy is to create the best, freshest, and most quaffable beer we can. We strive to perfect classic beer styles as well as craft totally unique creations. We’re incredibly persnickety about our beers and the details of the brewing process (something I picked up at brewing school). It seems to have worked as we’ve been awarded 16 medals, including six champions, in our first three years of operation.

Being a craft brewer is important to me. I never tire of the alchemy of turning very basic ingredients (barley, hops and yeast) into tasty, world-class beers. Here at Pagosa Brewing, we are crazy about brewing seasonal beers. We’ll put 24 different styles on-tap this year. Often, we’ll brew for a specific holiday or event. At other times, we’ll brew a special beer and create an event around it. We have a lot of fun around here in Pagosa!
