No-Li Rise & Grind BBQ Short Ribs

No-Li Brewing Company shares their recipe for grilled short ribs with a barbecue sauce made with their Rise & Grind coffee ale.

Ingredients

Rise & Grind Barbecue Sauce Yields16 fluid oz
  • 12 oz Rise and Grind
  • 1/4 cup Apple Cider Vinegar
  • 1/8 cup Ground Coffee
  • 1 tbsp Worcestershire Sauce
  • 1/2 tbsp Salt
  • 1 tsp Dry English Mustard
  • 1 1/2 tsp Brown Sugar
  • 1/2 tbsp Soy Sauce
  • 1 1/4 cups Ketchup
  • 1/2 tsp Cayenne Pepper
  • 1/8 cup Vegetable Oil
    • BBQ Short Ribs
    • 4 lbs short ribs, cut across the bone
    • 1 clove garlic
    • 16 oz Rise & Grind BBQ Sauce

Directions

  1. Rise & Grind BBQ Sauce
  2. Combine 4 oz Rise & Grind coffee ale (enjoy drinking the rest of it!), vinegar, coffee, Worcestershire, salt, mustard, soy sauce and brown sugar in a pan.
  3. Bring to a boil. Remove from heat and strain through fine mesh strainer till coffee is mostly removed. Combine ketchup and cayenne pepper. Slowly add oil to emulsify the sauce.
  4. Add additional salt, cayenne pepper and brown sugar (if desired) to increase the heat or sweetness based on your preferences.
  5. Rise & Grind BBQ Short Ribs
  6. Fill a large pot with water and bring to a boil. Add the ribs and garlic. Cover, and boil for 45 minutes to an hour, or until tender when pierced with a fork.
  7. Heat grill to about 400°F. While heating the grill, add 12 oz of the Rise & Grind BBQ Sauce to another pan and add the ribs, turning to coat well. Season with salt and pepper.
  8. Once thoroughly coated, put the ribs on the hot grill, meat side down first. Cook for about 10 minutes on each side. Don't burn them!
  9. Transfer the ribs to a hot outdoor grill, meat side down first, and cook 8 to 10 minutes on each side, taking care not to burn them.
  10. Serve with remaining sauce on the side, and fresh grilled veggies.
  11. Pair with a 4-pack of Rise & Grind coffee ale.
