Council Brewing Company Set to Open 2014 in San Diego

Council Brewing Company is the nano-brewery brainchild of the dynamic husband and wife team of Curtis and Liz Chism, and Greg Leiser, their CFO. Although Council Brewing will start with a small, 3 BBL brewhouse, they aim to make a big splash in the San Diego brewing community with their bold beers, including an award winning 100% Nelson-hopped pale ale and IPA, a Belgian saison, and the delicious Pirate’s Breakfast—an imperial oatmeal stout rounding out their core selection. Curtis and Liz have brewed over 25 different styles of beer and have won numerous awards.

Throughout history, beer has been a key part of society. Whether with family, or at a festival, in a castle, or on the road, great change and big decisions have happened over beer. Centuries ago artists, poets, philosophers, and many others actually were paid in beer. Council Brewing aims to follow history’s lead by creating a place where people can come together, talk, build relationships, or just chill. They are inviting you to come deliberate, debate, meet people, and maybe, just maybe, change the world.

Since the beginning of their homebrewing careers, Curtis and Liz have been designing recipes, brewing and even became BJCP beer judges together.  However, over the last year and a half Liz has done most of the brewing and has become an excellent brewer. Council decided to take a different approach to most breweries, and turned Liz to helm the brewing operations. Thus making Council one of a handful of breweries to have a female head brewer, and the only brewery in San Diego to have a female owner/head brewer. With this decision, they are well positioned to achieve one of their goals of encouraging women to turn to craft beer as a primary beverage of choice.

Council Brewing has selected a location in the central core of the San Diego business community, Kearny Mesa, for their first brewery location. They have a signed lease, submitted state ABC and Federal TTB licensing paperwork, started the design process, with construction slated for January 2014, and opening planned for Spring 2014.

Located at the intersection of three major freeways and a short drive from downtown San Diego, their brewery is easily accessible to visitor and resident of San Diego. It is located in a growing craft beer hub, adjacent to two other nearby breweries (Societe Brewing Company, Helm’s Brewing Company) and renowned O’Brien’s Pub.

Council Brewing Company currently has a Kickstarter campaign underway to help fund the build out of their tasting room.
