It’s what Santa should bring for under the craft brewer’s holiday tree. This seasonal treat is made with Mexican cinnamon, pasilla peppers and cocoa. The result is chocolaty and spicy, perfect for the holidays. Since it’s getting colder, we thought of trying to make a beer that tasted like a champurrado, or Mexican hot chocolate, minus the hot part. Champurrado is more than just chocolate. It is often accompanied with canelo (cinnamon), allspice, cayenne and even masa harina. So, we decided to break it down into separate ingredients and came up with a mix of organic cacao powder, canelo, allspice and for a twist, we’re adding a few pounds of dried pasilla chillies (we’re also freaks about good mole). And we figured the maltiness from the barley could substitute for the masa.
